Recipe Guide for Brown Sugar Milk Tea

Suitable for all Syrups | Estimated Time: Up to 2 Hours

Before you start - what you need:

  • Small saucepan (to fit 500ml)

  • Small bowl

  • Strainer

  • Teaspoon (kitchen/metric)

  • Tablespoon (kitchen/metric)

  • Wooden spoon

  • 1L measuring cup/jug Kettle (to hold 1L)

  • Teapot/jug (to fit up to 500ml)*

  • Honey or brown sugar syrup

  • Glass cup or mug 600ml size

  • Timer OPTIONAL: Choice of milk

*Ensure that your teapot/jug that is being used fits in your refrigerator and can hold hot liquids

Making the tea

  1. Boil 300ml of water, or according to the size of your tea infuser/teapot and add 1 scoop (5g) of Assam black tea leaves.

  2. Add tea leaves into a tea infuser/teapot and pour boiled water to brew for 15 mins.

  3. Remove tea leaves from infuser/teapot and refrigerate tea for at least 45 mins to cool. To serve warm, cool for 10 minutes.

When your brewed tea has cooled down:

  1. Add 1 scoop (25ml) of brown sugar syrup into a 600ml cup and mug. 5.

  2. Pour 300ml of the brewed tea and mix with a spoon, then add half a cup of ice. 

  3. Add your favourite toppings - Please read below on how to cook Tapioca Pearls.

  4. Top up with your choice of milk (from 150ml).

  5. Enjoy your homemade Milk Tea!

How to cook Tapioca Pearls

  1. Add 2 cups (500ml) of water to a small saucepan and bring to a boil.

  2. Add 2 scoops (44g) of tapioca pearls when water starts boiling (DO NOT COVER tapioca pearls while boiling).

  3. Boil for 20 mins and using a wooden spoon, stir twice; once at 10 mins and another at 20 mins.

  4. Turn off the stove after 20 mins, then cover tapioca pearls for 10 mins.

  5. Strain and rinse the tapioca pearls with cold running water for 10 seconds (NOTE: This is important to remove sticky starch).

  6. After draining, add the pearls to a small bowl then add one teaspoon of honey or brown sugar syrup* (add gradually) to the tapioca pearls, ready to be served. *To make brown sugar syrup, mix a teaspoon of white or brown sugar, and 2 tablespoons of boiling water.

Top Tips

  • When the brown sugar syrup hasn't been used, it thickens. Add hot water to dilute the syrup.

  • Assam Black tea leaves are recommended for your milk teas!

  • Can be enjoyed as a warm beverage!

  • To shorten the process, brew your tea a few hours before or the night before. You may even like to brew extra tea if you intend to make another drink during the week.
